Product description

The Pekaji Flat-Bottom Carbon Steel Wok

Compatible with induction, gas, ceramic and electric hobs. The Pekaji has a flat, magnetic base that makes full contact with the cooking zone, with no loss of heat conduction.

Forged carbon steel, hammered finish

Carbon steel is the material of the traditional wok: it heats fast, reacts immediately to temperature changes and holds its heat when you add cold ingredients. That's what makes the difference when you're searing meat or stir-frying over high heat. The hammered pattern on the Pekaji is the mark of forging rather than added decoration. The flat base makes full contact with the induction zone, with no loss of magnetic surface.

No coating. No PTFE, no PFAS.

The Pekaji has no non-stick layer, no PTFE and no ceramic top coat. Bare carbon steel. Once seasoned, a natural patina builds up and gets stronger with every use. Looked after properly, this wok cooks better after a few years than it did on day one.

A coated pan goes the other way: it scratches after a couple of years and ends up in the bin.

Seasoning: required, not optional

A new carbon steel wok ships with a thin coat of oil to stop rust. First, wash the wok thoroughly with hot water, washing-up liquid and a brush. Then dry it, rub a thin layer of high-smoke-point oil over it, and heat until the wok smokes. Repeat 2 to 3 times. Don't skip this step.

Wooden handle with hanging loop

The long wooden handle stays cooler than a metal one and gives you a secure grip when you're stir-frying over high heat. There's a metal loop at the end so you can hang the wok to dry, which is the quickest way to keep rust away. The handle and lid are wood and don't go in the dishwasher: hand-wash and dry.

Two sizes: 28 cm and 30 cm

The 28 cm suits 1 to 2 people. The 30 cm is 1 cm deeper, so it gives you noticeably more room to toss ingredients, for 3 to 4 people. Both sizes come with a solid wooden lid, so you can steam and simmer as well.

  • 28 cm: depth 8.5 cm · usable capacity approx. 1.7–1.9 litres · net weight 1.1 kg · wooden lid included
  • 30 cm: depth 9.5 cm · usable capacity approx. 2.2–2.4 litres · net weight 1.25 kg · wooden lid included

Usable capacity is the practical fill level for stir-frying, not the volume to the brim. Both sizes stay light enough to lift and toss the wok while you're cooking.

Compatibility

  • Induction: flat base, magnetic
  • Gas: direct flame, for high wok temperatures
  • Ceramic: flat, stable base
  • Electric: full contact with the hob

Care: never in the dishwasher

Uncoated carbon steel and the dishwasher don't mix, and the wooden lid and handle don't belong there either. Clean the wok with hot water and a soft brush, dry it straight away and wipe on a light film of neutral oil. Less than two minutes of routine that protects the patina you've built up.

Hammered by hand, and not for decoration Image

Hammered by hand, and not for decoration

The small facets covering the bowl are the mark of the forge: the metal was hammered by hand. It heats up fast, responds as soon as you turn the heat down and holds its temperature when you add cold ingredients. No PTFE, no ceramic: once seasoned, the Pekaji develops a natural patina and works better year after year.

A flat base that hugs your induction zone

Turn it over: the underside is flat and magnetic. It stays in contact with the whole of your induction zone, with no gaps, and sits steady on a ceramic or electric hob. On gas, the direct flame gives it the high temperatures you expect from a wok for searing. The result: four types of hob covered by one and the same wok, whatever cooker your home has.

A solid wooden lid for steaming

Whichever size you order, the parcel contains a solid wooden lid. Set on the bowl, it turns the Pekaji into a pot for simmering or steaming, after searing over high heat. The long wooden handle stays cooler than a metal one. One precaution on a barbecue or a kamado: keep the handle and lid out of the direct flame.

Two sizes, one centimetre of depth apart

The 28 cm (8.5 cm deep, 1.1 kg) suits a meal for one or two. The 30 cm gains a centimetre in depth: your ingredients have much more room to toss, and you can serve three to four people. The usable capacity, about 1.7 to 2.4 litres depending on size, is the practical fill level for stir-frying, not the brim-full volume.

Delivered within a week and came securely packaged. Very impressed with the wok itself which seems well made and of good quality. Have taken the time to make sure it was properly seasoned before first use and it has performed excellently. Highly recommended.

Frequently Asked Questions

How do I season the Pekaji before using it for the first time?

It is essential. Wash it in hot water with washing-up liquid and a brush to remove the protective oil, dry it, coat it with a thin layer of high smoke point oil and heat until it smokes. Repeat two or three times.

Does the Pekaji work on induction?

Yes. Its flat base is magnetic: it works on induction, gas, ceramic and electric hobs.

28 or 30 cm: which size should I choose?

The 28 cm suits 1 or 2 people and weighs 1.1 kg. The 30 cm, one centimetre deeper, serves 3 to 4 people and weighs 1.25 kg.

How do I wash the Pekaji and its lid?

By hand, for the wok, its handle and its lid. Wash it in hot water with a soft brush, dry it straight away, then wipe on a light film of neutral oil. The ring on the handle lets you hang it up to dry.
